At an event, held at James Beard House in New York City, Hans Birkholz, president & CEO of Windstar Cruises, said:

On each James Beard sailing, a guest chef will partner with members of Windstar Cruises' onboard culinary team to offer cooking demonstrations, a nightly featured dish, one-on-one interaction and even guided shore tours.
The three James Beard Foundation Collection 2016 cruise itineraries include:
- April 24 - 7-nights on board Wind Surf to Morocco and Southern Spain, visiting Barcelona and Lisbon, with Chef Michel Nischan (founder & CEO of Wholesome Wave);
- June 10 - 9-nights on board Star Legend sailing Spain and France from Lisbon to Dublin with Chef Maria Hines (owner & executive chef of Seattle Tilth);
- August 9 - 9-nights on board Star Legend sailing Spain and France (Dublin to Lisbon) with chefs Matt and Kate Jennings (owners of Townsman in Boston).
