Oceania Sonata ship to introduce restaurant La Table par Maîtres Cuisiniers de France

Oceania Cruises has outlined further details of La Table par Maîtres Cuisiniers de France, a new dining venue to debut aboard its forthcoming vessel Oceania Sonata.

Conceived as a formal collaboration with Association des Maîtres Cuisiniers de France, the upscale restaurant represents the first at-sea venue launched with the institution’s formal endorsement, reflecting an alignment with established standards of French gastronomy.

The space has been designed on an intimate scale, accommodating a limited number of guests and operating on a reservation basis. Its culinary direction is structured around classical French techniques, complemented by contemporary interpretation and ingredient pairings. The menus are to be developed under the supervision of Executive Culinary Directors Alexis Quaretti and Eric Barale, both affiliated with the Maîtres Cuisiniers de France, with contributions from invited chefs associated with the organization.

Company leadership indicated that the project reflects a continuation of its established culinary philosophy, shaped by an emphasis on refinement and respect for tradition, while also incorporating collaboration at an institutional level. The dining concept was described as an expression of culinary heritage adapted to a contemporary luxury cruise setting.

The proposed menus are expected to feature a rotating selection of dishes rooted in French culinary practice, including preparations combining seafood, seasonal produce, and classic sauces, alongside more modern compositions that emphasize precision and presentation. Ongoing development of the offerings is intended to maintain variation across sailings.

From a culinary perspective, the chefs overseeing the concept indicated that the venue reflects their shared approach to technique, flavor, and consistency, while the setting aboard the new vessel is designed to support a measured and structured dining experience. Representatives of the Maîtres Cuisiniers de France noted that the collaboration extends the organization’s culinary tradition into a maritime context, with attention to authenticity and craftsmanship.

The introduction of La Table forms part of a broader dining program aboard Oceania Sonata, which is planned to include multiple venues spanning different culinary styles. Among these will be established concepts such as Jacques, Red Ginger, Polo Grill, and Toscana, alongside additional new offerings. The vessel will also feature a dedicated tasting experience centered on Dom Pérignon, pairing a multi-course menu with selected vintages.
