Oceania Cruises has quietly unveiled twelve inventive Nikkei dishes aboard its signature Pan‑Asian restaurant, Red Ginger, marking a fusion of Peruvian flavors and precise Japanese techniques fleetwide.
Rooted in the culinary traditions developed by Japanese immigrants in late‑19th‑century Peru (where local ingredients merged with Japanese methods), Nikkei cuisine brings together fresh seafood, citrus, soy sauces, and spicy peppers in an adaptable and celebratory form.
This collection of new offerings made its debut on the Oceania Vista ship and will soon be served on Oceania Allura, with plans for fleetwide presentation by early 2026.
Culinary stewardship comes from Chef Gustavo Sugay, whose two decades of expertise in this vibrant cuisine have shaped the menu.
Among the standout dishes are Ceviche Nikkei—a refined iteration of the classic, featuring tuna dressed with leche de tigre, cilantro, sesame oil, and red chili—and Peruvian‑Style Beef Short Rib, served with lomo saltado sauce and miso sweet‑potato mousseline for a harmonious fusion of bold and umami notes.
Additional creations include a rice casserole crowned with miso‑glazed scallops, soft‑shell crab bao buns accented with Nikkei zarza, and desserts such as yuzu cheesecake finished with mango, passion fruit, and basil.
In announcing the expansion, Oceania’s Chief Luxury Officer explained that the Nikkei offerings represent a step forward in delivering on the brand’s guiding promise of ‘The Finest Cuisine at Sea.’ The line’s Executive Culinary Director described the menu as evidence of the creative interplay that arises when diverse culinary traditions meet, noting that it responds to guests’ sophisticated tastes and curiosity.
These enhancements build upon Oceania’s reputation as a haven for gourmand travelers: a cruise line distinguished by its dual Master Chefs of France, an artisan‑quality ingredient policy, a one‑chef‑per‑ten‑guest ratio, and complimentary open‑seating gourmet dining across all venues.
By integrating Nikkei cuisine into Red Ginger, Oceania Cruises furthers its pursuit of culinary innovation, offering guests a refined and globally inspired dining narrative that bridges continents and traditions on the high seas.
